The Walnut Story

The Walnut Restaurant’s story began 50+ years ago as an elegant and daring restaurant that changed the scape of Brisbane’s dining. Powerful media professionals and big-name celebrities were beckoned by the sense of seclusion and alluring décor defined by walnut paneling. At the same time, they freely shared the Walnut’s opulent atmosphere with Brisbane locals, former hotel manager Ian Brigham dubbing it ‘the people’s restaurant.’


Today, The Walnut Restaurant boasts that same classic elegance, complete with exquisite Egyptian crystal chandeliers, that has made it a Brisbane favourite for decades. Guests will find the intimate atmosphere ideal for either a casual dining experience or a sophisticated evening.  We serve modern Australian cuisine, artfully crafted from locally sourced ingredients by our talented Chefs, complemented by a thoughtful beverage list which includes regional and international wines, locally distilled spirits, classic cocktails and regional brews.

Sous Chef Troy

Troy’s love of cooking started as a young boy growing up in New Zealand. Living on a farm, Troy and his family created meals from their own produce, including cattle, chickens, honey from bee hives and an abundance of fresh herbs and vegetables. This ignited his passion for food and made his way into the culinary world, working in a local restaurant when he was just 16 years old.


With his growing talent and a hunger for competition, Troy participated and has been extremely successful in many local and international competitions, including the Welsh International Culinary Championships and ultimately winning NZ Young Culinarian of the Year in 2016.


Troy’s vision for The Walnut Restaurant’s menu, in collaboration with Royal on the Park's Executive Chef Craig, is to create tantalizing dishes, drawing on his past experience, using seasonal produce, while adding a modern twist to satisfy the modern diner.
